Laurie Nguyen – Owner & Executive Chef

Mother of 5 and grandmother of 2, Executive Chef Laurie Nguyen was born to a family that had been fishers by trade in Da Nang, during the Vietnam War. After losing her father to the war and shortly after the fall of Saigon, on April 30, 1975, her family became separated as some escaped in their boats leaving loved ones behind. She and her remaining family members were picked up by the 7th Fleet in the South China Sea and eventually relocated to a refugee camp in Camp Pendleton, CA. In the ensuing years, the family moved to the Pacific Northwest, where she has continuously resided since the mid ‘70s.
Having no formal culinary training, inspired by her deep and abiding passion for all things food, Laurie has transformed what was once a quiet deli and pizza shop along the dock of Olympia into a decadent and social fine dining experience. Brought to fruition through her sensibilities, rooted in the culinary traditions of Vietnam and France, she has infused her palate for the finest and exotic flavors into the local food, and has crafted a selection of the finest wine pairings found in the Pacific Northwest and around the globe. Her vision embodies a work ethic that is always striving for creativity and excellence in all her culinary creations.
